Hearty/healthy meal ideas for men on the go...

I’m struggling with my quiet time. Summer throws us off our normal routine. I’m definitely feeling disconnected but don’t have the desire to draw closer. Even when I do have the time I don’t know what to do or what to pray. Feeling spiritually empty. How do I get back to feeling his presence and actually wanting to do my quiet time when I just don’t see the need?

Lunch recipes and beefed up meals for men

Summertime Rice Salad
Cook 1 cup rice and 3 hard-boiled eggs. Dice the eggs and also some broccoli, 1 cup tomatoes, 3 small handfuls snow peas, and 3 servings chicken (canned, breasts or rotisserie). Mix all together and add ¾ cup corn, 1 T. olive oil, 1 T. red wine vinegar s & p and divide into 3 servings. Have 1 serving on a bed of greens.

One pot chicken & rice

Sauté 2 pounds chicken diced with a little OO & 2 carrots, 3 celery, 4 garlics & 1 onion chopped until cooked through. Turn heat to high & add 2 cups low sodium chicken broth & 1 1/2 cups rice. When boiling turn to simmer for 15-20 minutes until rice is done. Stir in 1/2 cup grated Parmesan. 

Mediterranean Salad
Large green salad (spring mix, box mix make it easy!)
1 hard boiled egg
½ cup cooked bulgar
Sprinkle of parmesan or feta (optional), banana peppers, a few greek olives, red peppers, red onion, English cucumbers, protein of choice, 
Fat free vinaigrette or a little olive oil and vinegar with italian seasoing, s & p

Protein ooey-gooey mug cake
This is something that helps me combat my desire for dessert.
I mix 1/2 teaspoon of baking powder, 1 Tablespoons Cocoa powder, 2 T. Almond milk, 3 T. Egg whites with one scoop of protein powder. Whisk & put in a mug. Microwave for 30-50 seconds (start low - you want it to look gooey in the middle - it's super disgusting if dry!) Sometimes I top with a T. nut butter.
